Being the chef at home,it is my job to serve healthy and tasty food.My boys(my hubby like to consider himself younger than what he is,lol) are not too picky,but they do like to see new dishes on the table all the time.And usually I don’t have too much time to spend on making dinner after I’m done playing with my son;so this is a tasty dish that you can make in 30 mins.
Butter chicken(an Indian dish) has always been one of my favourite,so this is like butter chicken mixed with more of a curry taste.
Ingredients:
- 1 chopped onion
- a handful of cilantro,chopped
- a can of tomato,big can,can be sliced/stew/whole
- 3 pieces of chicken breast,diced (skin removed,the skin is fat!You can also replace the breast with legs/thighs)
- 2-3 carrots
- 2/3 cup of water
Herbs:
- 2 tsp cumin
- 2 tsp paprika
- 2 tbsp turmeric
- 3-4 tbsp chili powder (if you like it spicy put more in)
- 1.5 tbsp garam masala
- cinnamon (only a little dash is enough,or else it’ll too overwhelming)
*Before you start making your dish you should get the rice cooking first.
- Heat up a tablespoon of olive oil in a pan/pot,fry the onions until slightly brown.
- Add the can of tomatoes,along with the carrots and cilantro;fry and stir for about a min then add the diced chicken in.
- Now it is time to put all the herbs and water in the pot; mixed it in thoroughly.
- Cover and let it cook for about 20 mins on medium heat,stir occasionally.
Your delicious dinner is now ready to serve~
As you are cooking you can alter the taste by adjusting the amount of herbs you put in.If you can’t take your food too spicy or got a little one at home adding more carrots and or coconut milk(if use,DO NOT put water in) can reduce the heat but still give you the good taste.
